Abstract

Recently, after the beneficial effects of secondary metabolites of fruits and vegetables on human health have been discovered, studies on this subject have gained momentum. Studies on phenolic chemicals and organic acids found in the peel and juice of fruits, particularly citrus species and variants, are gaining popularity. According to studies, determining the amount of biochemical qualities such as phenolic compounds and organic acids in fruits has now become one of the most important quality metrics in both commercial and consumer terms. The aim of this study is to evaluate the amount of phenolic compounds and organic acids compounds in mandarin species, which have high commercial value among citrus species, and to determine the quality parameters and properties of these components specific to fruit species. For this purpose, the literature data related to the above-mentioned quality parameters will be compared and evaluated on the basis of species, taking into account the research results from the past to the present and the characteristics of fruit species. As a result, a data pool containing biochemical attributes of mandarin species fruits with high commercial potential will be created.
