Özet

Green chemistry, which has become popular in recent years and emphasizes its benefits to human health, is manifesting in every aspect of life. Products developed using green chemistry principles, especially those used in the health sector, are in greater demand. This study reports the research results of the antioxidant, α-glucosidase, and acetylcholinesterase inhibitor activities of ethanol extracts obtained according to green chemistry principles from the species Chaerophyllum byzantinum, Echium vulgare, Euphrasia pectinata, Trifolium pratense, and Telekia speciosa, collected from the plateaus of Giresun province in the Black Sea Region. The ethanol extracts of the collected species, obtained via Soxhlet extraction in accordance with green chemistry principles, were evaluated for antioxidant activity using the 1,1-diphenyl-2-picrylhydrazyl (DPPH) assay. Subsequently, they were evaluated for α-glucosidase and acetylcholinesterase inhibitory activities. The DPPH radical scavenging activity of the E. pectinata species has been demonstrated for the first time in this study. The α-glucosidase and acetylcholinesterase activities of E. pectinata, Chaerophyllum byzantinum, and Echium vulgare species have been demonstrated for the first time in the literature with this study.
