METHOD OF OBTAINING PRODUCTS WITH HIGH ADDED VALUE IN GRAPE SEEDS Sema SAHIN1*, Tunahan ERDEM1 1 Cukurova University Deparmant of Agrıcultural Machinery and Technologies, Adana, Turkey *Correspondence Author : shnsema02@hotmail.com ABSTRACT Grape pulp; It is a waste of vinegar, molasses and wine industry consisting of grape seed, peel and stem. Grape pulp is a rich source of many phenolic substances such as proanthocyanidins, and the grape pulp extract obtained from it has a high amount of antioxidant and antiradical activity. As it is known, phenolic substances reduce the risk of heart diseases and cancer, and inhibit the bad cholesterol known as LDL. Due to its content and effects, grape pulp can be used as a natural preservative to protect foods against bacteria and oxidation. Grape seed oil contained in the grape pomace is an industrial waste that is evaluated by extracting it. Grape seed oil has a high smoke point at temperatures of about 216 °C. Thanks to its clean, mild flavor and high unsaturated fat content, it can be used for salad dressings, mayonnaises, oil infusions of garlic, rosemary or other herbs or spices. Although our country is among the developed countries with grape and grapebased industry, it cannot benefit enough from the residues of these products. Within the scope of this study, it will be tried to obtain high value-added products from grape pomace and to determine its potential in Turkey. Keywords: Grape, Pulp, Waste, Value Added
